Traditional Dishes of Podkarpacie: A Taste of Rzeszów and the Region

The flavours of Podkarpacie

Rzeszów sits at the centre of a rich culinary landscape, with traditional recipes extending from the surrounding countryside to the Bieszczady and the forests of northern Podkarpacie.

The cooking is built around ingredients that were readily available to households: potatoes, cabbage, buckwheat, flour, dairy, mushrooms, fruit and locally produced meat. The Ministry of Agriculture's List of Traditional Products records more than 200 products from the province, from breads and soups to cheeses, honey and preserves.

Some are strongly associated with Rzeszów itself, while others offer a taste of the communities and landscapes beyond the city.

Proziaki: the regional classic

Few foods are as closely associated with Podkarpacie as proziaki.

These simple flatbreads are made with flour, soured milk and other basic ingredients, with baking soda providing the leavening. Traditionally, they were baked directly on the hot plate of a kitchen stove, without fat.

Quick to prepare and filling, proziaki could take the place of bread when necessary. Today, they are one of the region's best-known specialities, often served warm with butter, cheese, cream or savoury toppings.

Żur rzeszowski

For something specifically linked to the city and its surroundings, żur rzeszowski is a natural choice.

The sour soup has a documented tradition around Rzeszów and has been listed as a traditional product since 2007. It is made using a sour starter and can include dried mushrooms, with cheese, eggs, sausage or ham depending on the recipe.

Its history has been linked to an old cookbook from a manor in Hyżne, as well as recipes passed down through generations in the Rzeszów area.

It is a familiar Polish dish with a distinctly local story.

Pierogi with a Podkarpackie filling

Pierogi are found throughout Poland, but their fillings can reveal a great deal about local cooking.

Bieszczadzkie pierogi, officially registered as a traditional Podkarpackie product, include fillings of potatoes and twaróg, sweet cheese, or apples with cinnamon. The potato and cheese version is traditionally seasoned with marjoram and can be served with crispy pieces of pork fat.

Other regional recipes use buckwheat, beans, dried fruit and hemp seed. In 2025, pierogi z siemieniem konopnym, made with cooked hemp seed, were added to the traditional products register.

For Rzeszów, these dishes are part of a much wider culinary tradition that can be explored across the province.

Fuczki and hreczanyki

Further south, the culinary traditions of the Lemko and Boyko communities can be found in dishes such as fuczki and hreczanyki.

Fuczki are savoury pancakes made with fermented cabbage and batter. Hreczanyki are patties made from cooked buckwheat combined with minced meat, onion and egg before being fried.

Both are hearty dishes based on inexpensive ingredients and remain associated with Bieszczady cuisine.

They make a worthwhile addition to the regional food trail from Rzeszów into the Carpathians.

Potatoes, cabbage and buckwheat

A handful of staple ingredients appear repeatedly in traditional Podkarpackie recipes.

Potatoes and cabbage were dependable crops, buckwheat was an important grain, and mushrooms could be gathered from the forests, dried and stored.

They appear in soups, pierogi, stuffed cabbage rolls and baked dishes. Gołąbki pilzneńskie, for example, are among the traditional products registered in Podkarpackie, alongside other recipes combining buckwheat, potatoes and mushroom sauces.

The cooking is straightforward, but that simplicity reflects the practical nature of older household kitchens.

Fruit, honey and the taste of summer

There is also a sweeter side to Podkarpackie's food traditions.

Apples, plums and other orchard fruits have long been turned into preserves and dried fruit, while honey remains an important regional product. Several varieties are officially recognised on the traditional products register.

The list continues to expand, with recent additions including lasowiacki napar lipowy, a linden blossom infusion associated with the Lasowiacy of northern Podkarpacie.

Such products reflect an older habit of preserving the summer harvest for the colder months.

From Rzeszów into the region

One of the pleasures of exploring Podkarpackie's food is seeing how quickly the culinary landscape changes beyond Rzeszów.

The city provides a natural starting point for discovering the dishes of the surrounding countryside, while journeys towards the Bieszczady reveal Lemko and Boyko traditions and the north brings the food heritage of the Lasowiacy.

The Ministry's traditional products register gives a sense of the scale of that heritage, with new foods still being documented and recognised.

For a taste of Rzeszów itself, start with proziaki and żur rzeszowski. Beyond the city, look for regional pierogi, fuczki, hreczanyki, buckwheat dishes, local honey and traditional preserves.

Together, they make up a food culture that is varied, practical and firmly connected to the landscape around Rzeszów.
